INGREDIENTS
1. Broken wheat – 250 grams
2. Jaggery – 250 gms
3. Scrapped coconut – ¾
4. Coconut cut into small pieces – ¼
5. Cardamon – 4
METHOD
Soak the broken wheat for 2 hours. Take ratio (wheat)1: 4 (water) and cook in pressure cooker for 3 whistles.
Pour ½ tumbler water in jaggery and put it in flame to make it as syrup.
Grind coconut adding 50 ml water, stain the paste in stainer to get the first coconut milk and keep it aside. Again add 50 ml water grind it in mixer, stain and take the second coconut milk.
Add the second milk to the cooked wheat and cook it for 15 minutes stirring constantly. Filter the jaggery syrup and add it to the payasam. Add powdered cardamom. Allow it to boil for some time. Add first coconut milk and allow it to boil only for 2 minutes not more than that. Fry the cut coconut pieces in ghee till golden brown and add it to payasam. Now the kearla special payasam is ready.
