In simple terms, inertia attempts to explain an objects inherent resistance to change in motion. As the apple is moving downwards with the knife, it is moving downward at a pretty fast velocity. This means that the apple wants to continue to move fast. For the apple to stop moving, a force must be applied upward on the apple. This force, the friction created as the apple moves down the knife, takes time to completely decelerate the apple, which explains why the apple continues to move down the knife.
