Fried Chicken Biryani Recipe
Ingredients
For Yakhni (Chicken Stock)
Chicken (whole legs): 3
Onion: 1 (chopped)
Ginger: 1 tbsp
Fennel seeds: 1 tbsp
Salt: 1 tbsp
Black peppercorns: 8-10
Cloves: 5
Bay leaves: 2
Cinnamon stick: 1
Star anise: 1
Mace: 1 piece
Green cardamom: 5
Water: 2 glasses
For Chicken Marinade
Salt: 1 tsp
Red chili powder: 1 tbsp
Chaat masala: 1 tbsp
Garam masala: 1 tbsp
All-purpose flour: 1 tbsp
Lemon juice: 2 tbsp
Orange food color (optional): A pinch
Egg: 1
Water: As needed to make a thick paste
For Biryani Rice
Basmati rice: 500g (washed and soaked for 30 minutes)
Cooking oil: ½ cup
Onion: 1 (sliced)
Whole garam masala (cinnamon, cloves, cardamom, bay leaves): As desired
Ginger-garlic paste: 1 tbsp
Red chili powder: 1 tsp
Tomato: 1 (chopped)
Chicken stock (prepared earlier): As needed
For Garnish
Fried onions: 2 tbsp
Almonds: 1 tbsp (fried)
Raisins: 1 tbsp (fried)
Tomato peel rose: For decoration
Boiled egg: 1 (halved)
Method
Prepare Yakhni (Chicken Stock)
In a pressure cooker, add chicken and all stock ingredients.
Add 2 glasses of water, close the lid, and cook for 10 minutes.
Once done, let it sit for another 10 minutes before opening.
Remove the chicken pieces and strain the stock into a bowl for later use.
Marinate the Chicken
In a bowl, mix salt, red chili powder, chaat masala, garam masala, flour, lemon juice, orange food color, and egg.
Add a little water to make a thick paste.
Coat the cooked chicken pieces with this marinade and set aside.
Prepare the Biryani Rice
Heat ½ cup oil in a large pot.
Add sliced onion and fry until transparent.
Add whole garam masala, ginger-garlic paste, and red chili powder. Sauté well.
Add chopped tomato and cook until tender.
Add the strained chicken stock and soaked rice.
Cook until the rice is done.
Fry the Chicken
Heat oil in a frying pan.
Fry the marinated chicken pieces for 5 minutes on each side until golden and crispy.
Assemble and Serve
In a serving dish, layer the cooked biryani rice.
Place the fried chicken on one side.
Garnish with fried onions, almonds, raisins, and a tomato peel rose.
Place a boiled egg on the side.
Serve hot with your favorite drink.
