Ingredients

Ginger -250gm
Coconut Oil -
Tamarind - 200 gm or 3 lemon size
Water -4 cup
Salt -
Jaggery -2 block or accordingly
Chilli Powder -1tsp
Turmeric Powder -1/2tsp
Mustard seeds -1tsp
Dry Red chilli -2
Curry Leaves -
Small onion -4 opt
Green chilli -3
Asafoetida powder -2 pinch
Fenugreek Powder -2pinch

Method

Soak tamarind in hot water for 30 minutes . mix and Strain well .
Add this tamarind water into a kadai along with chilli powder ,turmeric powder ,boil well for 20 minutes in medium flame ,by stirring occasionally

Then add jaggery and allow to melt ,switch off the flame .
Take another sauce pan ,heat oil and fry ginger until crispy .
Allow to cool this crispy ginger and grind coarsely .
Heat oil and add mustard seeds ,dry red chilli ,curry leaves ,small onion and green chilli .
When the small onion is golden brown ,add asafoetida powder and fenugreek powder ,mix well and pour this mix to the cooked tamarind water .
Add ground ginger too ,mix all those well ,again cook for 10 minutes ..
Add salt ..
Check the taste ,add salt ,spices or jaggery accordingly.
If u find inji puli to too thick ,u can dilute it with by adding hot water and boil well ..
so the easy tasty simple sadya special sweet ginger tamarind curry is ready to serve ..Enjoy
