When I was a child, I really enjoyed watching an animated series called Cooking Master Boy. One of the most memorable scenes for me was the fried rice showdown. Inspired by that, I decided to dedicate the first episode of my series Food Same BUT Different to fried rice.

In the world of fried rice, there’s a term that’s both important and somewhat mysterious — wok hei. It doesn’t have a clear origin or detailed explanation but is more of a concept passed down through tradition. I even came across something online called "wok hei essence" as a food additive.

Here's my brief explanation of what I believe best defines wok hei:The “wok hei” in fried rice comes from the combined effect of a hot iron wok, high heat, rapid stir-frying, oil vaporization, and partial Maillard reaction.
