At the mouth of the Chiampo Valley the last foothills of the Lessini mountains slope down towards the plain in soft undulations of between 250 and 350 meters of altitude and covered by vineyards. At the base of production are the Gambellara Classico and Gambellara D.O.C., white wines of a subtle and bright straw-yellow colour, of fresh and delicate scent with a slight fragrance of elderflower. The Recioto di Gambellara is produced in the normal methods, refined in barrique barrels and lively, and also in the Spumante version. The Gambellara Vin Santo, a niche wine to which tradition attributes medicinal properties, is the only one produced in Veneto. It is surely the persistent taste and the unmistakable bouquet that make it one of the most sought-after contemplation wines, demanded by connoisseurs due to its limited production. The “Recioto” name derives from the dialect term “recie” used to indicate the best parts of the bunches of Garganega which were carefully selected for the production of the diverse types of this unique white Veneto wine that adapts well to desserts, seafood dishes, fresh or aged cheeses, also the area’s popular goat cheeses or even to the traditional salt cod “ alla Vicentina”, eggs and asparagus and spit roasted kid.
