This old fashioned granola recipe comes from the Better Than Store Bought cook book which is from 1979. You can customize this recipe to suit what you have on hand and your liking! Cinnamon, nutmeg, etc. would be great spices to add to the syrup and dried cranberries and blueberries would be delicious in this. Let your imagination run free!
2 ½ cups quick cooking oatmeal
1 cup shredded coconut
1/3 cup untoasted sunflower seeds
¼ cup hulled sesame seeds
½ stick (4 TBSP) unsalted margarine or butter (or use salted and don’t add additional salt)
¼ cup packed dark brown sugar
¼ cup honey
½ TSP salt
1 ½ TSP vanilla extract
½ cup toasted wheat germ
½ cup raisins
1. Preheat oven to 300F.
2. Spread the oatmeal, coconut, sunflower seeds, and sesame seeds in a large, lightly buttered roasting pan or oven proof dish (about 11x17 inches). Bake for about 20 minutes, tossing several times.
3. Meanwhile, combine in a small saucepan, the butter, brown sugar, honey, and salt, and bring to a simmer, stirring. Add the vanilla off the heat.
4. Reset oven control to 350F, then add the wheat germ to the toasted mixture. Dribble the sugar honey mixture over the toasted mixture, tossing with two forks to evenly distribute the honey mixture.
5. Return pan to oven and bake for 5 to 6 minutes longer. Add the raisins, toss to distribute, and press the granola down firmly into an even layer. Bake 5 minutes or so longer, or until the granola is golden.
6. Remove from the oven and let cool. Slip a flexible spatula under the granola to break into large pieces (or whatever size you would like). Store in an airtight container.
