I have a serious fascination with Umeboshi Plums, and all things Japanese food for that matter.
Umeboshi have something so uniquely them, it's hard to even put your finger on. They have such a beautiful fruity and floral aroma, a gorgeous delicate salinity, and a bright acidity that makes you salivate.
This is why the brine, called umeboshi "vinegar", is such a good foil to earthy greens that really could use a lift.
Combine with butter, or olive oil, or sesame oil and you have a perfect finish for so many dishes.
