Ingredients:
For the cake:
2 cups (250g) all-purpose flour
2 tsp baking soda
1 ½ tsp baking powder
1 tsp salt
2 tsp ground cinnamon
½ tsp nutmeg (optional)
1 cup (200g) brown sugar
1 cup (200g) white sugar
1 cup (240ml) vegetable oil
4 large eggs
2 cups (about 4 medium) grated carrots
¾ cup chopped walnuts or pecans
½ cup crushed pineapple (drained)
½ cup raisins (optional)
1 tsp vanilla extract
For the cream cheese frosting:
8 oz (225g) cream cheese, softened
½ cup (115g) unsalted butter, softened
2 cups (250g) powdered sugar
1 tsp vanilla extract
Pinch of salt
Instructions:
1. Preheat oven to 350°F (175°C). Grease and line two 8-inch cake pans.
2. In a bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
3. In another bowl, beat eggs, both sugars, and oil until smooth. Add vanilla.
4. Stir in carrots, pineapple, nuts, and raisins.
5. Gradually mix in the dry ingredients until just combined.
6. Divide batter evenly between pans and bake for 30–35 minutes.
7. Let cakes cool completely before frosting.
To make the frosting:
1. Beat cream cheese and butter until fluffy.
2. Add powdered sugar, vanilla, and salt. Beat until smooth.
3. Frost between layers and on top. Decorate with more nuts if desired!
