The Only Şambali Recipe You’ll Ever Need! Crispy Outside, Soft Inside
Ingredients
4.5 cups semolina
1 cup sugar
1 tablespoon baking soda
2 cups yogurt
1/2 cup whey (yogurt water)
Almonds or pistachios for topping
Butter + sugar for coating the baking dish
Preparation
1- In a pot, mix the semolina, sugar, and baking soda.
2- Add the yogurt and yogurt water, then mix until smooth.
3- Grease the bottom of your baking dish with butter and sprinkle sugar to coat the base completely.
4- Spread the mixture evenly into the dish and smooth the surface.
5- Cover with plastic wrap, making sure it is airtight, and refrigerate overnight.
Next Day – Syrup
6 cups sugar
4.5 cups water
1 slice of lemon
1- Combine sugar, water, and lemon in a pot.
2- Stir until the sugar dissolves.
3- Once it starts boiling, let it simmer for 5 more minutes, then remove from
heat.
Baking
1- Cut the chilled mixture into small, even squares.
2- Place an almond or pistachio on each piece.
3- Lightly brush the surface with syrup and sprinkle a little semolina on top
to create a textured look.
4- Bake in a preheated oven at 190°C (375°F) for about 35–40 minutes,
baking the bottom first, then the top until golden.
5- Pour the warm syrup over the hot dessert immediately after removing it
from the oven.
6- Let it rest for about 2 hours, then serve.
