BANANA BREAD RECIPE:

2 or 3 ripe bananas, peeled
1/3 cup coconut oil, melted (1/4 cup is acceptable)
1 teaspoon baking soda
pinch of pink salt
3/4 cup coconut sugar (1/2 cup or less for less sweet, 1 cup for more sweet)
1 flaxseed meal "egg" replacement
1 cup whole wheat organic flour

In a mixing bowl, mash the ripe bananas with a fork until completely smooth. Stir the melted coconut oil into the mashed bananas. Mix in the baking soda and salt. Stir in the sugar, flax egg, and flour. Pour the batter into your prepared bread loaf pan. Bake for 50 minutes to 1 hour at 350°F or until a fork inserted into the center comes out clean.

This vegan banana bread is SO tasty. QUICK and EASY to make. It is super SOFT and MOIST. Throw in some chocolate chips and walnuts and you will fall in love!
