Camp Cooking Southern Campfire Stew on a beautiful spring day! The star of the show this week is the Pathfinder 64oz Bush Pot. This pot is perfect for 2-3 people and makes for a great cooking kit when paired with the Pathfinder Pot and Pan stove and Alcohol stove. This recipe is excellent for a hearty meal at camp and is certainly filling! If you enjoy camp cooking, simply ingredients that are easy to pack always make camp cooking a breeze. The recipe makes enough for 4 large servings but can easily be adjusted as needed.
1 Package Lit'l Smokies Cheddar Cocktail Sausages, cubed
2 8oz Cans Skinned White New Potatoes, Sliced and drained
2 8oz Cans Green Beans, drained (either French style or traditional cut beans will work)
1 4oz Can Mushroom Pieces, drained
1 Small Yellow Onion, rough chopped
4 Tablespoons - Salted Butter
Salt/Pepper to taste
Add onions, sausage, and mushrooms to your stew pot and sauté in butter until onions turn translucent.
Add the rest of the ingredients into the pot (salt and pepper to taste), mix well. Cover and reduce heat to a simmer (stirring occasionally) until flavors are well blended. Since everything is already cooked, it can be eaten any time, however, the longer it simmers the better the flavors meld together.
If you decide to cut the recipe in half, the left over ingredients (sausage, onion, mushrooms, butter) go great in a breakfast omelet!
