SINGLE SERVE BROWNIE | melt in the middle dessert for one!!

This single serve brownie is the ultimate dessert for one! Somewhere between a gooey chocolate fondant and a melt in the middle lava cake, this chocolate brownie can be adapted to the way YOU like your brownies. Want it chewy and fudgy? No problem. Gooey and molten more your vibe? This brownie has it all!

Baking can feel like too much effort when you're cooking for one person but this one pot recipe couldn't be easier!

For one single serve brownie, you need:
40g butter
40g chocolate, broken into pieces
45g caster sugar
25g plain flour
10g cocoa powder
pinch of salt
1 egg white
flaky sea salt, for sprinkling

Preheat the oven to 180°C (160°C fan).

In a small ovenproof dish, add the butter and the chocolate pieces. Place in the oven for a couple of minutes, just until the butter and chocolate have softened. Take out the dish and mix the butter and chocolate together until smooth and all the chocolate has melted.

Add in the sugar and mix again. Add in the flour, cocoa powder and salt and mix until thick and smooth. Finally, add in the egg white and mix until smooth and glossy. Smooth out with your spatula/the back of your spoon, then bake in the oven. If you are using a wider dish (e.g. a small pie dish), where the brownie is
flat and has a larger surface area, you will only need to bake it
for around 10 minutes; if you are using a small, deeper dish (such
as an individual-sized casserole dish), you will need to bake it for
around 25 minutes.

Bake until the edges of the brownie are set but the middle has
a nice soft jiggle to it. Once baked, sprinkle over some flaky salt and let it cool slightly before eating.
