Today we're making ourselves a wild yeast mead! This means that we aren't using and "synthetic" yeasts as I call them. Those kinds of yeasts would include and store bought wine, ale or mead yeasts. In order to to this you have to use a product that has natural yeasts on it. I am using organic raisins in this case and I am very pleased with the results. I will note that because this mead was very low on nutrients I did have to add yeast nutrient to help it along. Let me know what you think below and thanks for watching!
I did use Diammonium Phosphate (Also known as DAP) which is a yeast nutrient. Sure, in the viking ages they didn't have yeast nutrient but you better bet they would have used it given then chance! This is still a wild yeast mead because I didn't add any other yeast to it. Yes, I fed the yeast but that doesn't mean that it's not a wild fermentation!
Recipe Used:
1 Gallon of Spring Water
1.8 Pounds of Orange Blossom Honey
2 Handfuls of Raisins
1 tsp of Yeast Nutrient
