Ingredients (Brioche Buns)
• 500 g all-purpose flour
• 60 g sugar
• 3 g salt
• 8 g active dry yeast
• 200 ml warm milk
• 80 g softened butter
• 2 eggs
• 1 tsp vanilla
Steps
1. Combine the basic ingredients
• In a large mixing bowl, combine the warm milk, eggs, flour, sugar, yeast, and salt.
2. Knead the dough
• Knead on low speed for about 3 minutes until everything comes together and forms a dough.
3. Add the butter
• Add the softened butter and continue kneading until fully incorporated.
4. Knead on medium speed
• Knead on medium speed for 10–12 minutes until the dough is smooth, elastic, and slightly sticky.
5. First rise
• Cover the bowl and let the dough rise for 1½–2 hours, or until doubled in size.
6. Divide the dough
• Punch down the dough and turn it onto a lightly floured surface. Divide it into two equal portions (about 500 g each).
7. Shape the dough
• Roll each portion into a circle about 12 inches (30 cm) wide and ¼-inch (½ cm) thick.
8. Cut into wedges
• Use a pizza cutter to slice each circle into 12 equal wedges.
9. Roll the wedges
• Starting from the wide edge of each wedge, roll it towards the tip.
10. Prepare for second rise
• Place each roll tip-side down on a lined baking sheet, about 2 inches (5 cm) apart. Loosely cover and let rise until doubled in size (about 30 minutes).
11. Brush with milk
• Lightly brush the tops with milk.
12. Preheat the oven
• Preheat the oven to 190 °C (375 °F).
13. Bake
• Bake for 15–18 minutes, or until golden brown.
14. Finish
• Remove from the oven, brush with melted butter, and serve. You can enjoy the buns warm or let them cool to eat later.
