Marinade:
350g beef (tenderloin)
½ tsp salt
1 tsp Shaoxing rice wine
1 tbsp light soy sauce
1 egg white
30g cornstarch
Seasoning sauce:
2 tbsp black rice vinegar
2 tbsp light soy sauce
1 tsp dark soy sauce
2 tbsp oyster sauce
1 tbsp of sugar
¼ tsp salt
Ground pepper
1 tsp cornstarch
10cl water
400g fresh noodles
or 300g dehydrated noodles
4 cabbage leaves
1 carrot
1 onion
2 mini peppers
30g green onion
15g cilantro
1 tbsp grated ginger
5 garlic cloves
4 tbsp vegetable oil
Oil for frying
