The most common way to cover the soil used in bonsai is moss. This contributes to the illusion of age and grandeur. Of course moss does not always work.
Moss requires a certain amount of moisture but also not too much. This can make it temperamental. Despite this it works with many of the common species used in bonsai.
There are a number of species with which moss will not work. Many of these are accent plants . Others include species like ficus which need the water moss takes away. Over watering of fruiting bonsai may also lead tot he rupture of fruit.
Considering this other options for top dressing your bonsai pot are needed.

Each option has its merits and demerits. All of these options achieve the same goals as moss to some degree. Which ever option you choose it must:
Look appealing
Retain some moisture
Augment your bonsai
Not be adverse to the health of your bonsai
