This traditional recipe gives you around 2.5 KG of fully cooked biryani, perfect for 6–10 people.

🍗 CHICKEN MARINATION (1150 g)
Add the following into a large bowl:
1150 g cleaned chicken
200 g curd (yogurt)
3 tbsp ginger–garlic paste
Salt to taste
3 tbsp red chilli powder
1 tsp turmeric powder
2 tsp coriander powder
1 tsp garam masala
½ tsp cumin powder
1½ tsp homemade biryani masala
Juice of 2 lemons
Mix well and massage the chicken thoroughly.
Marinate for at least 2 hours or preferably overnight.

🧅 BASE LAYER (CHICKEN)
In a biryani pot/handi:
1. Spread the marinated chicken evenly at the bottom.
2. Drizzle 3–4 tbsp birista (fried onion) oil.
3. Add fried onions, mint leaves, and coriander.

🍚 RICE PREPARATION – 1 KG BASMATI RICE
1. Wash the rice and soak for 30 minutes.
2. In a large vessel, boil water with:
Salt (generous amount)
1–2 tbsp oil
3. Add the rice and cook:
Remove 50% cooked rice
Remove 70% cooked rice
These two stages will be used in layers.

1st Layer – 50% Cooked Rice
Spread over chicken

Mix warm milk + saffron (or food colour).

🔥 DUM COOKING METHOD (FINAL)
1. Turn on the stove and place a tawa on it.
2. Keep the biryani pot on top of the tawa.
3. Cover the biryani pot tightly with foil paper.
4. Place a heavy plate/weight on top so that no steam escapes.
COOKING STAGES:
High flame – 10 minutes
Medium flame – 10 minutes
Low flame – 10 minutes
Total Dum Time: 30 minutes
