Mtewem / Mtouem [white sauce] is one of Algiers’s most popular tagines. The name tells us from the start that garlic plays an important role ("Mtewem" means "with garlic").

This traditional stew, which comes to us from the important culinary heritage of Algeria, has become so popular that it is so prepared for festive occasions, for iftar meals during Ramadan and on a daily basis.

An essential dish with countless nuances inherited from generation to generation, also prepared with a “red sauce”.

The base, pleasantly scented with cumin, is composed of meatballs and pieces of chicken or others. It is particularly appreciated with almonds added to chickpeas.

Le Mtewem / Mtouem [sauce blanche] est l’un des tajines algérois les plus populaires. Le nom nous indique dès le départ que l’ail y joue un rôle important (« Mtewem » veut dire « avec de l'ail »).

Ce ragoût traditionnel qui nous vient de l’important patrimoine culinaire d’Algérie s’est popularisé à tel point qu’il est préparé tant pour des occasions de fêtes, pour les repas de l’iftar durant le ramadan qu’au quotidien.

Plat incontournable aux innombrables nuances héritées de génération en génération, il se prépare aussi avec une « sauce rouge ».
La base, agréablement parfumée de cumin, est composée de boulettes de viandes et de morceaux de poulet ou autres. Il est particulièrement apprécié avec des amandes ajoutées aux pois chiches.
