Ackee ‘n’ saltfish in plantain boats

Enjoy your delicious and vegan take on this classic Jamaican dish!
Ingredients:
1 can of heart of palm , drained and sliced into chunky slices
2-3 plantains
1 tbsp nori flakes
1 tbsp vg fish sauce
Pinch of salt
1 onion, finely chopped
2 garlic cloves, minced
1/2 red pepper, sliced
1/2 green pepper, sliced
1/2 - 1 scotch bonnet, minced
2 tomatoes, diced
2-3 spring onions, chopped
Few springs of thyme
1/2 teaspoon black pepper
1/2 teaspoon paprika
2 tablespoons vegetable oil
Salt to taste
1 tbsp soy sauce (optional)
Method:
1. Peel the plantains then pop into an air fryer for 20 mins on 190°C or in a preheated oven for 20-25 mins each side.
2. Add the sliced hearts of palm into a container with the nori, fish sauce, salt and cover. Give it a shake and allow to marinade.
3. Heat up a pan on medium heat then add some oil then onions. Once they are soft add the garlic, peppers, scotch bonnets.
4. Add the hearts of palm in the pan and mix well, breaking down as they cook. Add the tomatoes, spring onion, thyme, paprika, salt, pepper and mix well.
5. Place the ackee in the pan and fold it in. Add some soy sauce (optional) then serve up in the plantain and enjoy!
