Guest chef Nate fires up his awesome barrel smoker and produces some delicious yard bird!
Ingredients
1 Whole Chicken
For the rub
-1/4 part Kosher Salt
-2/4 part Course Ground Black Pepper
-1/4 part paprika
Directions:
-Preheat smoker to 275 degrees with charcoal and cherry wood
Add Kosher Salt, Black Pepper, and paprika in a shaker container, and shake to evenly combine.
-Season the chicken with a light dusting of seasoning being sure to get under the wings and drumsticks
-Place chicken in smoker and keep lid shut for the first hour
-After the first hour, check on the chicken. You are looking for a nice color with no burning or scorch marks.
-Pull the chicken from the smoker after the chicken reaches 165* temperature at the breast (about 2 1/2 to 3 hours)
-Let rest for 15-20 minutes before slicing and serving
Tip: For crispier skin, leave the smoker cover off for the last 30-45 minutes of cooking.
