📝 Ingredients
For the Boondi:
1 cup besan (gram flour)
A pinch of baking soda (optional, for crispiness)
½ cup water (adjust to get a flowing batter)
Oil or ghee for deep frying
For the Sugar Syrup:
1 cup sugar
½ cup water
4–5 strands of saffron (optional)
2–3 cardamom pods, crushed (or ¼ tsp cardamom powder)
A few drops of rose water or kewra essence (optional)

Step 1: Prepare the Batter
1. In a bowl, sieve the besan to remove lumps.
2. Add water slowly and whisk into a smooth, flowing batter (not too runny or too thick).
3. Optional: Add a pinch of baking soda for extra puffiness.
Step 2: Fry the Boondi
1. Heat oil/ghee in a deep pan on medium heat.
2. Hold a perforated spoon (boondi jhara) over the oil.
3. Pour a ladleful of batter over the jhara and let the batter fall into the oil through the holes.
4. Fry until the boondis turn golden but not brown. Stir gently.
5. Remove and drain on paper towels. Repeat until all batter is used.
Step 3: Make Sugar Syrup
1. In a pan, add sugar and water. Heat until sugar dissolves.
2. Add saffron, cardamom, and rose/kewra essence.
3. Cook until you get a one-string consistency (dip a spoon, press syrup between fingers – it should form a single thread).
4. Turn off the heat.
Step 4: Combine Boondi with Syrup
1. While syrup is hot, add fried boondis into it.
2. Mix well and let it soak for 15–20 minutes, stirring occasionally.
3. Once soaked, you can serve warm or let it cool completely.
