Recipe:
2 lbs potatoes (russet, Yukon gold, or a combo of the two)
2-3 garlic cloves
¼ cup heavy cream
¾ cup whole milk
1/3 cup butter
Salt
Instructions:
1. Peel potatoes and remove skin from garlic
2. Bring potatoes, garlic, and salt to a boil over high heat, reduce heat to medium low and simmer for 25 minutes, or until tender
3. Drain, return potatoes and garlic to the pot, reduce heat to low, and gently dry cook for about 5 minutes to reduce moisture
4. Mix cream, milk, and butter. Heat to almost boiling
5. Rice potatoes and garlic
6. Stir in dairy until smooth. Start with ½ to ¾ of the dairy before adding more
7. Check for seasoning and adjust if necessary
