Chicken Tikka Masala
For Marination
Take 1 kg boneless chicken
Add 1 tsp garlic paste
Add 1 tsp ginger paste
1/2 tsp Turmeric Powder
1 tbsp Red Chilli Powder
1 tbsp Coriander Seed Powder
1 tsp of Cumin Seed Powder
1 tsp of Garam Masala
Add 3/4 cup of yogurt
2 tbsp of mustard oil
1 tsp of chat masala
1 tsp of kasuri methi
Add salt to taste
Add 1 tbsp lemon juice
Mix it well
For Gravy
Heat 3 tbsp of oil
Add 1 tbsp of butter
Add 3 onions finely chopped
Sauté till the onions are translucent
Add 1 tbsp of garlic paste
1 tbsp of ginger paste
Sauté for a minute
Add 1 tsp of turmeric powder
2 tbsp of red chilli powder
1 tbsp coriander powder
1 tsp of cumin seed powder
1 tsp garam masala
Sauté it for a few seconds
Add 1/4 cup of blanched tomato water
Mix well
Add tomato puree of 5 blanched tomato
Add salt to taste
Cover it & let it cook
Add 1/4 cup of fresh cream
Mix well
For tikka,
Use a tandoor or a tawa
Add the marinated chicken on the pan
Add water as required
Add 1 tbsp of butter
Cook it for 5-7 minutes
For Smoked Chicken/Coal Tadka
Burn 2 coals,
Shift it to a bowl, place it in between the cooked chicken,
Add 1 tbsp of ghee
Cover it immediately
Let it rest for 10 minutes
Add gravy to the chicken tikka
Mix well
Cook for another 3-4 minutes
Drizzle some cream
Sprinkle some kasuri methi
Add chat masala
Freshly chopped coriander
Ginger juliennes
Add chopped chillies
Add finely sliced onion layered with lemon juice
For Bhuna Sabzi
Heat 1 tbsp of ghee
Splutter 1 tsp of cumin seeds
Add 1” of julienned ginger
Add 4+5 green chillies
Sauté for a few seconds
Add 3 onions finely chopped
Sauté till the onions are soft & translucent
Add a little salt for onions to sweat
Add 100 gms carrots
Add 100 gms of french beans
Sauté the vegetables
100 gms of baby corn
Mix well
Cover & cook on a medium to low flame for 3-5 minutes
Add red, yellow, green bell pepper sliced
Mix well
Add 1/2 tsp of turmeric powder
1 tbsp of coriander seed powder
1 tsp of anar dana powder
1/2tsp of pepper powder
1 tsp of am hur powder
1 tsp of kasuri methi
1 tbsp of butter
Mix well
1/4 cup of cream
Add freshly chopped coriander leaves
Serve
