Fry a handful of curry leaves in coconut oil. In the same
oil, sauté 2 small onions, ginger (1 inch piece)garlic (6
big cloves) and fennel seeds (1TBSP). It is better to add
last 3 ingredients in crushed form. When the onions
become translucent add green chilies and 1/2 part of a
small tomato.After 5 minutes, add 122 Tsp of turmeric
powder and 2 tbsp of coriander powder. Sauté well until
the raw smell of powder goes.Grind the mixture by
adding little water in order to make thick paste.
Heat a mud pot. Add some coconut oil. Sauté 2
cardamom, 2 pieces of cinnamon stick, 4 cloves, 6-8
no.s of shallots and a small piece of ginger. Add the
mixture and chicken-around 400 g(no need of
additional water-if you need different consistency add
little water).Boil chicken in that mixture in low flame.
Add thick coconut milk 3/4 cup , green chilies and
crushed curry leaves.Mix all together and turn off the
flame when it starts to boil.
This curry is perfect combination with ghee rice, appam
nice pathiri etc.
