How to Make Homemade Yogurt for Digestive & Immune Health

🧴 What You'll Need:
Food dehydrator (we use Excalibur brand) https://excaliburdehydrator.com/produ...
Organic, whole milk
Quality probiotic (e.g. VSL#3)
Pot for heating up milk
Food thermometer
Pyrex/glass containers to hold warmed milk
Wooden spoon or spatula to stir milk
Set dehydrator to 115 degrees Fahrenheit (46 C). Pour milk into a pot on the stove set to HIGH (e.g. 7-9 heat level). While milk is heating, open up a probiotic capsule and pour at least ½ capsule into the bottom of the dry, clean pyrex/glass container. Stir the milk every 2-3 minutes to prevent skin formation and burning of milk. Use a food thermometer to periodically check temperature, milk should reach 180 degrees F (82 C) to kill off pathogenic bacteria. Keep milk at 180 degrees F for five (5) minutes while stirring continuously.
After 5 minutes, place a lid on top of the pot and set the pot off to the side to cool down to around 115 F (46 C). You may put the pot into the refrigerator or freezer to speed this process up, just make sure to set a timer so you don’t forget the cooling milk is in there! :-) Once the milk cools down to 115 degrees F, pour the milk into the pyrex containers with the probiotic already on the bottom. Carefully place the open containers into the dehydrator on the racks provided. Close the dehydrator and set the timer for 24 hours.
After 24 hours, the yogurt will be ready to consume. Take it out of the dehydrator and place lids on the glass containers. This will last in the refrigerator for a week give or take a day or two. Be mindful of mold growing in the yogurt and NEVER consume moldy or spoiled yogurt.
Why 24 hours - this ensures the probiotics consume all of the lactose present in the yogurt. Typical grocery store yogurt is only fermented for 4-6 hours and as a result is still full of lactose. This also ensures each serving will contain around 100 billion CFU’s of beneficial bacteria (if you use a gallon of milk you will have many servings).
Why VSL#3 probiotic - this particular product demonstrates usefulness treating IBD (Crohn’s, Ulcerative colitis). There is a history of IBD in my extended family. Other probiotics may also work very well!
