Vegan Meal Prep | Simple Family Friendly Recipes

We're getting ready to do a kitchen makeover and we cannot be cooking throughout this work therefore, a meal prep has to be done!
Today I share with you what we made for meal prep to get through this weekend without having to cook in the kitchen. Everything made is very simple, yummy family friendly vegan recipes and we hope you give them a try!

Recipes:
Potato and Vegetable Gratin (oil free)
Prep your cauliflower sauce by chopping 1 head of cauliflower and boiling in water with some salt.
Chop up potatoes, your choice of vegetables and add it to a 9x9 casserole dish. Season with salt, smoked paprika, Italian seasoning and onion powder and mix well.
Once cauliflower is done, drain but leave about a cup or so of water to help blend sauce. Season with salt, garlic powder, and blend until smooth using a hand blender.
Add sauce to your potato and vegetable mix and bake at 400 degrees F for about 1 hour until potatoes are tender and cooked through.

Chickpea "Menudo"
Add chopped onions, carrots, celery (not traditional) in a pot with a tbsp of oil. Sautee until tender. Add 2 chopped tomatoes or add 1-2 cans diced tomatoes if you have and add cooked chickpeas. You can use however much chickpeas you want, I added about 1 to 2 cups of chickpeas.
Season with cumin powder, smoked paprika, smoky ancho chili, oregano or Italian seasonings and salt.
Cook for about 30 to 45 mins until flavors meld together. Serve with chopped red onion, lime juice and chopped cilantro!

No Bake Baked Beans
In a pot add 1 tbsp grapeseed oil, add chopped onion, warm up spices (smoked paprika, ancho chili powder, onion powder, garlic powder, Italian seasoning). Add 1 large 28oz can crushed tomatoes, sweeten with 1 cup coconut sugar and season with salt to taste. Add 1/2 to 3/4 cup of water to thin out sauce to your liking.
Add about 4-5 cups of beans, I used cannellini beans and pinto beans.
