Masala Lachha Aloo | Cheese Sauce

Ingredients:
Potatoes, large (आलू) - 3 nos
Coriander seeds (धनिया बीज) - 1 tbsp
Cumin (जीरा) - 2 tsp
Salt (नमक) - to taste
Asafoetida (हींग) - ¾ tsp
Green chillies, chopped (हरि मिर्च) - 1-2 nos

Chilli flakes (कुट्टी मिर्च) - 2 tsp
Ginger, chopped (अदरक) - 1 tbsp
Fresh Coriander, chopped (ताज़ा धनिया) - handful
Chaat masala (चाट मसाला) - 2 tsp
Oil (तेल) - a dash

For Cheese Sauce:
Butter (मखन) - 2 tbsp
All Purpose Flour (मैदा) - 2 tbsp
Milk (दूध) - 200 ml
Kashmiri chilli powder (कश्मीरी मिर्ची पाउडर) - 1½ tsp
Cheese, grated (चीज़) - ½ cup
