Easy Burfi Recipe/ Tasty Milk Fudge Recipe (Fiji Indian Style)
Ingredients:
• 2 cups sugar (brown or white)
• 1 cup of water
• 2 cups milk powder
• 1 tablespoon butter
• 2 cardamom seeds
Method:
1. Put pan on medium heat.
2. Add sugar and water, mix well and bring it to a boil.
3. While waiting for sugar syrup to boil, line a tray with baking paper.
3. Wait for syrup to form one thread consistency (See Tips).
4. Add butter to syrup and turn heat off.
5. Add milk powder and give it a good mix until well combined.
6. Pour into baking tray and allow to cool for 10 minutes.
7. Once cooled cut into squares and store in a container either in the fridge or cupboard.
8. Enjoy.
Tips:
• Whatever amount of milk powder is used, the same amount of sugar should be used
• One thread consistency: Get a dish with cold water and drop a little bit of the syrup in the water, the syrup should not mix with the water. It should settle to the bottom. OR take some syrup in a spoon and blow it a few times, and take some in your finger and thumb and pull apart and you should be able to see a thread.
• If you want chocolate burfi or chocolate fudge add ½ cup of chocolate chips when adding the milk powder
• If you want Burfi/milk fudge to cool down quicker, place a cooling rack in the fridge and place baking tray on top to speed process.
• If you want thick burfi or fudge, double the amount of ingredients
