Crispy Vienna Turkey Schnitzel - A Juicy Pan-fried Delight

We've all heard about this Austrian classic. I love to make it myself. This however is not the authentic one, but it's made in the same style. The true Wiener schnitzel is made with veal and pan fried only in butter.
However, the turkey version I made here it's still absolutely delicious and mouth watering. And it goes well with 🍺.
📜 The recipe will serve 4 people.
🔹Ingredients:🔹
400g / 0.8lbs turkey breast meat for schnitzel
salt
sweet paprika
black pepper
cayenne pepper
3-4 tbsp flour
egg or 2 (depending on the size)
breadcrumbs
oil for frying
knob of butter
Preparation:
Tenderize and flatten your meat so that it's minimum of 6mm thick. This will ensure equal temperature and cooking times throughout your schnitzel.
Prepare your breading station. Crack 1 to 2 eggs in a small container and beat them well, add a pinch of salt. You can season your meat instead of seasoning your flour if you prefer. But do not do both, or it will be too salty.
Add 3-4 tbsp of flour to another small container and season it will pinch of salt, pinch of cayenne pepper, pinch of black pepper and 1/4 tsp of sweet paprika. Pour in another small container enough breadcrumbs for coating all the meat, to it, add at least 1 tbsp of sweet paprika. Mix the seasoning well into the flour and into the breadcrumbs.
First coat the meat in flour well. Tap off excess flour and move it to the eggs. Make sure it's well coated. Use your fork to lift the meat so the excess egg drips down and move the meat into the breadcrumbs. Once the meat is well coated, place it onto a place. Repeat the process until all your meat is coated with breadcrumbs.
Place your meat into the fridge for about 10–15 minutes.
Pour oil into a pan up to around 1 cm / 0.4 inch high and add in a knob of butter. Heat up the oil until it reaches 180°C / 356°F. Slowly add in your schnitzel and fry them off 1 minute per side until they are golden brown. Do not overcrowd your pan or the oil temperature will drop.
Once they are fried, move them to a wire rack or on paper towels to dry off excess oil. Salt them right away.
Serve them with your favourite side dishes. But do not forget the lemon! Enjoy!
Tips:
You can eat them together with potato salad, mashed potatoes, fries, in a sandwich or as a burger.
