RECIPE:
Red peas Cook-up rice
Prep Time 30 minutes
Cook Time 1hr 20 minutes
Ingredients for the beef
1 Lb. beef cut into small pieces
1 Tbsp buttermilk
1 Tbsp all purpose seasoning
1 Tbsp beef seasoning
1 Tbsp dried thyme
½ Tsp salt
Ingredients to cook with
2 tbsp oil
½ Cup red peas / beans
4 cups of water (to cook the peas)
½ Cup onion peel and chopped
¼ Cup garlic cloves peel and diced
½ Cup diced green onion
½ Cup diced parsley
5 or six prig thyme
2 cups coconut milk
2 Cups water
2 cups parboiled rice
1 Tbsp cook -up rice seasoning
1 Tbsp all purpose seasoning
1 Tsp browning or cassareep
1 hot pepper [optional]
Instructions :
Trim the fat off the beef
Cut into medium pieces
Wash and pat dry ( optional)
Season the meat with the first 5 ingredients
Rub the seasoning all over the meat to coat evenly (set it aside or allow it marinade overnight stored in the fridge )
Wash and soak the red peas
Heat a pot with the oil over a medium heat ,cook until slightly caramelized
Add the beef cook for five minutes
Then add the red peas and the water.
Cook for 50 minutes over a low heat to become soft
The peas should hold their shape but not too soft when pressed into it with a spoon. .
Next add the coconut milk, water, rice aromatics, seasonings, browning, stir to blend
Taste for flavor then add the black pepper and salt if desire
Reduce the heat on low, cover the pot
and let it simmer for 35 minutes or until the rice has fully cooked
Stirring in between cooking time
Keep stirring in between so the rice doesn't stick to the pot
Five minutes before the food finishes add the pepper cover with the lid
Allow to steam until finished
This recipe makes 6 to 8 servings.
It tastes best when it is warm .
TIPS:
If using a whole coconut, Make sure it is fresh and good to use,not rancid
If rancid it will spoil your food because of the smell.
Parboiled rice is the best to use for this recipe
You can adjust the salt to your taste .
IT is better to prepare the meat the day before
And the peas
Soaking the peas will shorten the cooking time.
