ITK heads deep into Chengdu to eat like a local, starting in a back alley noodle stall known only to the neighborhood regulars. Here, the specialty is hui guo rou mian — twice-cooked pork noodles drenched in a thick, aromatic chili oil.
Next, the journey moves to a hidden chaoshou cart tucked inside an apartment complex, serving pork and chive dumplings swimming in Chengdu-style chili oil.
For something sweet, they stop at a street dessert cart making tangyouguozi — sticky rice balls coated in dark brown molasses, served on a stick.
The day ends at a Muslim Western Chinese BBQ restaurant, grilling lamb kebabs over charcoal and finishing them with a generous dusting of chili and cumin — arguably the best in Chengdu.
