中式燒餅 ~ Chinese Shaobing

在台北有一家很道地的中式餐館,裡面除了單點料理之外,還有很多的小點類,牛肉、豬肉餡餅,麵點類之外,母親最愛吃他們家的燒餅夾肉,酥脆又熱呼呼的燒餅,老闆放上牛肉或大塊豬肉,一口咬下去,芝麻的香氣令人難忘,今天自己複製當年的芝麻燒餅,好像又回到和家人相處的時光,嘴上吃著美味,心中有無數的回憶。
食材:(芝麻燒餅可做6個)
中筋麵粉 200g
熱水 90g
冷水 30g
植物油 15g
鹽 2g
酵母 2.5g
胡椒粉 少許(自行決定)
白芝麻 少許
油酥:
低筋麵粉 50g
植物油 30g
Ingredients: (6 sesame shaobing can be made)
All-purpose flour 200g
Hot water 90g
Cold water 30g
Vegetable oil 15g
Salt 2g
Yeast 2.5g
Pepper (optional) A pinch
White sesame As much as you like :)
Pastry:
Low-gluten flour 50g
Vegetable oil 30g
油酥製作:
取一平底鍋放入植物油及低粉,開小火在鍋中輕輕拌炒,直到油酥呈現黃褐色。
Steps to make the pastry:
Take a frying pan, and add vegetable oil and low-flour flour. Using low heat to stir fry until the oil is brown.
步驟如下:
1.中筋麵粉中倒入酵母、熱水混合均勻。
2.再將鹽、冷水及植物油倒入,使用筷子攪拌成為棉絮狀。
3.移至桌面搓揉成糰。
4.麵糰滾圓捏緊放入容器中等待發酵30分鐘。
5.桌上灑些中筋麵粉,將麵團慢慢桿開成為一個三角形的大麵皮。
6.將油酥內餡平均塗抹在麵皮上。
7.由上向下慢慢捲起成為一個圓柱狀。
8.麵糰平均分成6等份,分割成6個的小麵糰。
9.小麵糰頭尾捏緊壓扁,桿成長方形薄片,折成三折。
10.表面刷上少許水,沾上一層白芝麻。
11.芝麻面朝上,用桿麵棍桿開成為長方形的薄片。
12.間隔整齊排放在烤盤上。
13.放進已經預熱至210度c的烤箱中烘烤15分鐘至表面金黃色即可。
14.成品可以夾油條或煎蛋。
附記:同樣的食材也可以做成圓型的芝麻燒餅,製作內容如影片所示。
Steps:
1. Pour the yeast and hot water into all-purpose flour and mix well.
2. Next, add salt, cold water, and vegetable oil. Stir with chopsticks.
3. Using your hands, knead it into a dough.
4. Put the dough in a container for 30 minutes to ferment.
5. Sprinkle some all-purpose flour on the table, and roll the dough into a large triangular shape.
6. Spread the pastry filling evenly on the dough.
7. Roll the dough slowly from top to bottom to form a cylindrical shape.
8. Divide the dough into six equal parts.
9. Pinch each end of the dough to fold it into a rectangular shape. Then roll the dough as shown in the video.
10. Next, brush the surface with water and coat it with white sesame seeds.
11. With the sesame side up, roll it into a thin rectangular slice.
12. Spaced evenly on the baking sheet.
13. Put it in the oven preheated to 210 degrees Celcius and bake for 15 minutes until the surface is golden brown.
14. Shaobing is like a sandwich. You can add anything you like to it, like fried dough sticks or fried eggs.
Note: The same ingredients can also be made into round sesame shaobing, as shown in the video.
