***1) Sattu Sharbat (Sweet & Savory)
Sweet Version:
Ingredients:
2 tbsp sattu
1 glass cold water
1 tbsp jaggery or honey
A pinch of cardamom powder (optional)
Instructions:
1)Mix sattu and jaggery in water.
2. Stir well until smooth.
3. Add cardamom powder and serve chilled.
Savory Version:
Ingredients:
2 tbsp sattu
1 glass cold water
½ tsp roasted cumin powder
½ tsp black salt
½ tsp lemon juice
Chopped coriander and green chilies (optional)
Instructions:
1. Mix all ingredients in water.
2. Stir well and serve cold.
****2)Sattu Paratha
Ingredients:
1 cup whole wheat flour
½ cup sattu
1 small onion, finely chopped
2 cloves garlic, minced
1 green chili, chopped
½ tsp ajwain (carom seeds)
½ tsp nigella seeds (kalonji)
½ tsp black salt
1 tbsp mustard oil
Water as needed
Instructions:
1. Mix sattu, onions, garlic, chili, ajwain, kalonji, black salt, and mustard oil in a bowl.
2. Knead whole wheat flour with water to make a soft dough.
3. Take a small dough ball, roll it, and fill it with sattu mixture.
4. Seal, roll gently, and cook on a hot tawa with ghee until golden brown.
5. Serve with curd or pickle.
***3)Sattu Ladoo
Ingredients:
1 cup sattu
½ cup jaggery (grated)
¼ cup ghee
½ tsp cardamom powder
Chopped nuts (almonds, cashews, pistachios)
Instructions:
1. Heat ghee in a pan, roast sattu on low flame for 2-3 minutes.
2. Let it cool slightly, then mix with jaggery, cardamom, and nuts.
3. Shape into ladoos and let them set.
4. Store in an airtight container.
