Our Cheesy Potato Frittata Recipe cooks on the stovetop in about 15 minutes, and is loaded crispy potatoes, sharp cheddar cheese and a handful of eggs to make what is essentially a hearty crustless quiche that’s also super easy to customize with your favorite add-ins.
Potato Frittata Recipe Ingredients
1 lb potatoes, I'm using russet potatoes
2 tablespoons avocado or extra virgin olive oil
1 cup cheddar cheese, grated
7 eggs
1/2 tsp salt
1/2 tsp pepper
1/4 tsp smoked paprika
2 garlic cloves
Potato Frittata Recipe Directions
Begin with about a pound potatoes, washing them well under running water, then chopping them into pieces about ½ inch square. Place the potatoes on a single layer on a microwave safe plate, and microwave on high for about 2 ½ minutes, just until the potatoes are tender. It’s best to do this in two batches, so the potatoes are spread out evenly.
Next, heat a 10 inch cast iron skillet over medium high heat, and add 2 tablespoons of avocado or olive oil. Once the oil is hot, add the potatoes, stirring to coat each piece with oil. Cook the potatoes on medium high heat for about 7 - 10 minutes, until they’re crispy on the edges.
While the potatoes cook, we’re going to put together rest of the ingredients. Grate about a cup of cheese. Crack 7 eggs, and add 1/2 tsp salt and a 1/2 tsp ground black pepper. Add 1/4 tsp smoked paprika, and whisk to combine.
Pour over the potatoes in the skillet. Reduce the heat to medium, and cook until the eggs are set, about 3 - 5 minutes. Lift the edge of the frittata, and tip the pan gently so the uncooked eggs make it to the bottom of the pan to cook. You can add a cover to help cook the eggs on top. Add the ½ cup of cheese on top, and cover and cook until the eggs are just cooked.
You can pop it under a broiler set on HIGH for a minute or two for some color on top, I don’t bother preheating the broiler, because everything is cooked at this point. The frittata is light and fluffy, it’s perfectly seasoned… this potato frittata is great for feeding a crowd, and if you have any leftovers, they’re easily reheated and great for breakfast, lunch or dinner during the week.
