Thalassery Biriyani originated from Malabar region of Kerala. It is famous for its unique aroma and taste. It is made using Jeerakasala rice\ Kaima rice.

Ingredients :
For Bista ( fried onion) :
Onion - 1 ( big size)
Ghee / Oil
For thalassery biriyani masala :
Pepper corns - 1 tsp
Fennel seeds - 2 tsp
Cardamom - 8
Cloves -10
Cumin seeds - 1/2 tsp
Javithri - 2 piece
Star anise - 1 (small)
Shahjeera - 1/4 tsp
Cinnamon - 2 piece ( 2" size)
Red chilli - 3
Marathimogg - 2
For Chicken masala :
Chicken - 750 g
Onion - 2 ( medium size)
Ginger garlic paste - 3 tbsp ( medium size garlic 25 + 2" size ginger)
Green chilli paste / crushed green chilli - 8 nos
Tomato - 2 ( medium)
Curd - 1 tbsp
Lemon juice - 1/2 tbsp
Vanaspati / dalda - 1 1/2 tbsp
Ghee - 1 tbsp
Biriyani masala - 1 1/4 table spoon
Turmeric powder - 1/4 tsp
Crushed bista - half of the fried onion
Pudina - a handful
Coriander leaves - a handful
Salt to taste
For making rice :
Jeerakasala/ kaima rice - 2 1/2 cup ( 500 g) soak for 30 mnts
Water - 3 3/4 cup
Cinnamon - 3 piece ( 2" size)
Cardamom - 5
Cloves - 8
Bay leaf - 1
Star anise - half piece
Ghee - 2 tbsp
Lemon juice - 1/2 tbsp
Salt to taste
For garnishing :
Bista ( fried onion)
Cashew nuts - enough
Raisins - enough
Coriander leaves - 2 tbsp
Pudina - 2 tbsp
Ghee - 1 tbsp( 1/2 tbsp+ 1/2 tbsp)
Biriyani masala - 2 pinch
Rosewater &Milk mix - enough (1/2 tbsp rosewater + 1/2 tbsp milk + 1/4 tsp turmeric powder)
