This easy one-pot Boerewors & Paprika Tomato Rice is packed with smoky braai flavours and cooked in a single pot. Perfect for weeknight dinners, camping, or when you want proper South African comfort food with minimal effort.
Ingredients:
200 g boerewors (slice into thick coins)
• 1 cup rice Allsome rice
• ½ tin (200 g) chopped tomatoes
• ½ Tbsp smoked paprika
• ½ tsp sugar
• ½ beef stock cube or stock pot (crumbled)
• 1¾ cups boiling water
• Small handful fresh coriander chopped
Method:
Heat a medium-sized pot on medium-high. No oil needed the boerewors fat will do the job.
Add boerewors meat, fry 4–5 min, breaking it up with a wooden spoon until browned and crumbly.
Sprinkle in the smoked paprika, stir for 30 seconds, your kitchen will smell like a proper braai.
Dump in the ½ tin tomatoes, sugar, crumbled ½ stock cube, boiling water, and rinsed rice. Stir once to combine.
Bring to a rolling boil, then immediately drop heat to the lowest setting, pop the lid on tight.
Simmer for 16–18 min.
Turn off heat, leave lid on and rest 5 min.
Remove lid, fluff with a fork, scatter fresh coriander over the top.
