Catongo is an albino cacao that has a mutation in the anthocyanin-inhibitor gene that means the pigment doesn't express. It grows mostly in southern Bahia, and is prized for its mild flavor and light color. Mestiço makes an 81% cacao content bar out of their Catongo that is mild and nutty, and wonderfully low in sugar while being high in deliciousness.
