Lemon Olive Oil Biscuits

I found a version of this recipe when I was a) fasting (these days called 'being vegan') and b) had no butter available and a hankering for biscuits!
These biscuits can be adjusted to your liking, me.. I like them a little extra lemon-y and with the definite note of salt!
INGREDIENTS
1 Cup of Plain Flour
1/4 tsp Baking Soda
1/4 tsp salt
1/4 cup + 2 Tbsp Olive Oil
1/2 cup granulated sugar
1 tsp Vanilla Essence
Lemon Zest of 1/2 lemon
2 tbsp Lemon Juice
1 tbsp currants (optional)
METHOD
Makes 20 biscuits
Preheat oven 180 degrees celsius
1. Mix the flour, baking soda, salt and lemon zest in a bowl
2. Blend the oil, sugar, juice and essence in another bowl
3. Pour the wet ingredients into the dry ingredients and mix through (and add the optional extras if using)
4. Place formed teaspoonfuls onto a tray and flatten slightly
5. Bake for 12 minutes
