🍟 Today I’m sharing a delicious recipe that's easy enough for any home cook to whip up: Homemade Carne Asada Fries with Chimayo, NM red chile! These fantastic carne asada fries are so decadent and flavorful. After seeing Carne Asada fries become so popular, I was inspired to create my own twist on the recipe by adding NM red chile (this IS "Red or Green?" after all!). In this video, I'm marinating my cut of steak in our spicy, citrusy Carne Asada marinade featuring Chimayo red chile that's inspired by the classic Carne Asada recipe, popularized in San Diego, California. I'm also making homemade fries, but you could definitely take a quick shortcut by using frozen fries as well. This recipe is perfect for every taste--even your pick eaters will be begging for more! It will quickly become one of your new staples.

🔸 Ingredients:
2 lbs. skirt steak or flank steak
4 russet potatoes (1 potato per person)
Onion Salt or Salt, to taste
Vegetable Oil
Optional toppings: shredded cheese, guacamole, sour cream, pico de gallo, jalapeños, fresh chopped cilantro, extra lime
Marinade:
Juice of 3 limes
Juice of 1 orange
1/4 cup soy sauce
1 tsp onion salt (I use Trader Joe's)
1/2-1 tsp garlic powder
1 tbsp New Mexico red chile powder (I get mine from Chimayo, NM)
🔸 Instructions:
1) Preheat the oven to 375°F (190°C).
2) Prepare the fries by slicing 4 russet potatoes into 1/4" sticks.
3) Soak the sliced potatoes in cold water for about 15 minutes to remove excess starch, which helps them crisp up.
4) While the potatoes are soaking, prepare the marinade by adding the juice of 3 limes, the juice of one orange, 1/4 cup of soy sauce, 1 tsp onion salt, 1/2-1 tsp garlic powder, and 1 tbsp of NM red chile powder to a shallow dish.
5) Whisk the ingredients together to combine the citrus and spices all together.
6) Add steak to marinade and coat them well.
7) Marinate the steak for 30 minutes; if the steak cuts are already chilled, I would leave them out to get to room temperature, but you may also put them to marinate in the fridge.
8) Once the fries have finished soaking, drain them and thoroughly pat them dry.
9) Add the fries to a pot and boil them for 20 minutes. This will parboil them to allow them to cook more quickly in the oven.
10) Once the fries are finished boiling, again drain them and thoroughly pat them dry.
11) Spread the wedges on a baking sheet in a single layer and lightly oil or spray them and season them thoroughly with onion salt or regular salt.
12) Bake them in the oven at 375°F for about 20 minutes, flipping them halfway through to ensure all sides are crisped up.
13) Once the steak has marinated for 30 minutes, add 1 tbsp of vegetable oil to a very hot skillet and spread it around.
14) Add the steak to the pan, being careful not to overcrowd, and cook on each side for 3-4 minutes.
15) Let the meat rest for 10 minutes to allow the juices to redistribute.
16) Once meat has rested, finely chop it into cubes.
17) Now it's time to assemble: add fries, then meat, cheese, sour cream, lime, guacamole, and/or any other toppings you would like!
