🌿 Kopir Shakambhari | A forgotten Bengali recipe made from cauliflower leaves 🌿
Inspired by the shakambhari traditional of turning simple often discarded ingredients into nourishing food.Today's recipe brings your Kopir shakambhari -a soulful Bengali dish made using fresh cauliflower leaves. simple nutritions and packed with flavour.
Ingredients.:
finally chopped cauliflower leaves (approx 4 cups)
potatoes (1.5-two cups,finely diced)
mustard oil
dry red chilli
kalonji
garlic paste (1tsp)
turmeric powder (1 tsp)
green chillies (4,slit)
salt (as needed)
(optional: fried dried shrimp with salt and turmeric)
Cooking Methods:
Heat mustard oil~temper with dry red chilli and kalonji~ add garlic paste and saute~Add turmeric plus little water~add diced potatoes and cook 4- 5 minutes~add chopped cauliflower leaves and late them reduce~adjust salt after leaves and let adjust salt after green shrink ~add green chillies~3-4mins cooks~until dry and flavourful~Sarve with rice, roti or paratha.
