🍗 Chicken Kohlapuri – A fiery and flavorful chicken curry inspired by Kohlapuri cuisine, packed with roasted spices and vibrant masala.
🥩 Qureshi Kabab – Juicy, tender kababs made with a secret blend of spices that bring true Nawabi taste to your plate.
CHICKEN KOHLAPURI
Ingredients
Chicken cut into 16-piece 1 kg
Ginger garlic 3 tbsp
Tahini pastes 1 tbsp
Chili powder 1 ½ tsp
Turmeric ½ tsp
Salt 1 tsp
Coriander powder 2 tsp
Ingredients for Roasted Masala
Poppy seeds 1 ½ tbsp
Black cumin seeds 1 tbsp
Button red chilies 6
Black pepper corns 1 tsp
Cloves 3
Green cardamom 2
Nutmeg ¼ tsp
Cinnamon small stick 1
Peanuts 3 tbsp
Ingredients for Curry Paste
Above roasted spice powder
Tahini pastes 2 tbsp
Tamarind pulp 2 tbsp
Cream 2 tbsp
Coconut powder 2 tbsp
Desiccated coconut grounded ½ cup
Water ½ cup
Ingredients for Final Gravy
Oil ½ cup
Chopped onion 1 cup
Tomatoes 4 blended
Water 1 cup
Coriander leaves to garnish 2 tbsp
Green chilies large 3
METHOD
Marinate chicken, leave it for 2 hours, dry roast the spices mentioned for spice powder and then grind them finely. Prepare the curry paste, put the roasted spice powder in a blender jug, add all the other ingredients for curry paste with water blend to a smooth paste, starting preparing the curry. Heat oil, add finely chopped onion, fry till light golden, add the marinated chicken, fry till oil comes on top, add the blended paste and tomato puree, continue to fry until oil separates, add water to the gravy, cook on low flame, add green chilies whole, cover and cook for 20 mins. Lastly add chopped coriander and serve.
QURESHI KABAB
Ingredients
Mince ½ kg
Butter 2 ounce
Onion grated and water removed 2
Ginger garlic paste 2 tbsp
Chili powder 1 ½ tsp
Roasted cumin 1 tsp
Allspice 1 tsp
Turmeric a pinch
Papaya pastes 1 tsp
Sat 1 tsp
Chat masala 1 tsp
Green chilies chopped 1 tsp
Lemon juice 1 tbsp
Coriander leaves chopped 2 tbsp
METHOD
Mix all the ingredients, add the beef in it, leave for 2 hours. Take handful of mince, shape into kebabs, grill, and serve with raita.
