Join me as I visit Toyosu Market, Tokyo’s iconic seafood hub and the successor to the legendary Tsukiji Market (est. 1935). I may have missed the peak tuna auction action, but the energy, the freshness, and the respect for food sourcing were still palpable.
To honor the experience, I headed to Daiwa Sushi, famous for their early-morning omakase crafted with fish straight from the market floor. Chef Hai made the experience unforgettable—with some surprise Brazilian words and a custom bite at the end featuring ginger, green onion, and ponzu. I left feeling seen, nourished, and deeply inspired.
