Flaky Sourdough Discard Biscuits (Great Flavor & Texture!)

Love flaky, buttery biscuits? These sourdough discard biscuits are the perfect way to use up your discard while making the most delicious, tender, and golden-brown biscuits ever! They're easy to make, full of flavor, and have those irresistible layers. Grab your sourdough discard and let's bake!


Ingredients:

• 240g all-purpose flour

• 120g bread flour

• 60g whole wheat flour

• 12g (1 tbsp) baking powder

• 3g (½ tsp) baking soda

• 9g (1 ½ tsp) salt

• 120g cold tallow, cut into small chunks

• 50g (2 ½ tbsp) honey

• 300g sourdough discard (100% hydration)

• 180g cold milk or buttermilk



Instructions:

1. Preheat oven to 425°F (218°C). Line a baking sheet with parchment paper.

2. Mix dry ingredients: In a large bowl, whisk together all flours, baking powder, baking soda, and salt.

3. Cut in the tallow: Add cold tallow and work it in with a pastry cutter or your fingers until pea-sized crumbs form.

4. Combine wet ingredients: In a separate bowl, whisk together sourdough discard, milk, and honey.

5. Mix dough: Pour wet ingredients into the dry mixture. Stir until just combined—do not overmix.

6. Laminate for flakiness: Lightly flour a surface and turn out the dough. Pat it into a rectangle, then fold it in thirds like a letter. Rotate 90 degrees and repeat twice more for layers.

7. Cut biscuits: Roll or pat the dough to about 2 cm (¾ inch) thick. Cut biscuits with a floured cutter or knife.

8. Bake: Arrange biscuits on the prepared baking sheet, close together for soft sides or spaced apart for crisp edges. Bake for 15–18 minutes until golden brown.

9. Cool & enjoy: Let biscuits rest for a few minutes before serving.
