Morning Glory Muffins
2 cups grated carrots
1 apple, peeled, cored, grated
1 stick butter, softened
3/4 cup sugar
3 eggs
2 teaspoons vanilla
2 cups all purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
1 cup Craisins
1 cup chopped nuts (we used pecans)
Preheat oven to 350°.
Peel and grate the carrots. Set aside.
Peel, core, and grate the apple. Set aside.
Use 1-2 Tablespoons of the flour to coat the nuts and Craisins. Set these aside. 
Cream the butter, sugar, eggs, and vanilla in a mixer. Add carrots and apples. Continue mixing.
Mix in the flour, baking soda, salt, and cinnamon.
Fold in the Craisins and the nuts that are coated in flour.
Spray a muffin tin with cooking spray or use cupcake liners.
Bake in the preheated oven at 350° for 25 to 30 minutes.
Makes 10 - 12 jumbo muffins.
