Steak Searing Temperature – Gas Grill Mod
Searing steak and other cuts of meat will seal juices in and add a very rich element to the flavors of the meat– I don’t know anyone who disagrees with this statement!
Many newer, high end gas grills now come with a sear burner (an area of the grill that puts out high direct heat that is perfect for searing steaks). If you have one of these, you should use it on your steaks. If you don’t have a sear burner, well, that’s what we are here for… A method to mod your existing grill to produce that high, direct, steak searing temperature of a commercial steakhouse broiler! This mod MAXED my grill’s temperature indicator to 750F in about 10 minutes!
Caramelization and the Maillard reaction are key to adding flavor, color and texture that you just won’t get without searing. The key to searing on a grill is high heat. Reading between the lines of all the science and chemistry on those Wikipedia pages says the grill needs to be HOT to achieve a proper steak-searing temperature– Considerably more so than your average grill’s capacity.
In order to produce more heat from an existing grill, we need to increase our propane fuel flow by utilizing an adjustable high-pressure regulator.
NOTE: Before you swap out your low-pressure regulator to a steak-searing, high-pressure counterpart, there are a few *IMPORTANT GUIDELINES to follow:
Don’t try this on a budget grill, it will probably melt or worse. Use your best judgement and try this mod at your own risk!
Your grill will get VERY HOT, considerably more so than stock. Make sure it’s not too close to anything that can melt such as:
House Siding
Deck Railings (ask me how i know) 🙂
Never leave any grill unattended, especially if using this mod.
Keep the grill dials (the ones built into your grill) in the maximum (wide-open) position when using a high-pressure regulator. Control the flame with the variable gas regulator dial (not the grill dials) and start LOW.
Now that you have a grill capable of producing a steak-searing temperature, don’t panic about overcooking the steak. The outside can tend to brown up quickly, but the inside can still be very rare. We recommend you always use an instant read thermometer to ensure you are cooking the meat to perfection. If at any point you feel the steak is getting too brown or burned and the thermometer is indicating rarer than you like, move the steak to a cooler part of the grill to let it finish cooking through.
