Also known as "how to bully a Garrador with parries". The thing to take note of about this fight is that the combat knife will break before the Garrador dies to knife prompts. There is a strategy that lets you simply escape the room, but I was more interested in killing him. Rather than wasting extra knives, all you have to do is use the normal attacks of the knife. There are a few ways you can accomplish this, but my preferred method is to use parries. Doing so will turn the Garrador around and give you a free swing at the parasite. You just have to be careful about getting too greedy with knife hits.
At the start of the fight, I do take the first knife prompt since it's pretty much free. After that I stay close to the Garrador and this usually gets him to do his combo attack. The first hit of which is fairly slow and telegraphed, making it easy to parry. Once he turns around and I get my attacks in, I stay close and the cycle repeats. There is one instance near the end where he didn't follow the pattern. At that point I purposely knife his body in order to bait another swing from him to parry.
The alternative is wait for the Garrador to whiff the side slash or the full combo attack and then punish. It's much slower, but it also uses far less durability. That would be the strategy to use in the double Garrador fight after killing the first one. I'm sure it could be done safely, and you would get to keep all of your boot knives. I'll have to test that out later. Something else to keep in mind is that very rarely the Garrador will almost immediately turn around and attack after his back parasite is hit. This is why I only go for one knife attack and pause before continuing. As long as you mind your spacing, you should be fine.
