To make these vegan sprinkles, it's the same recipe for royal icing but switching the egg white for aquafaba.
1 batch is made with the following but you won’t need the whole amount unless you want to do tons of colours.
500g icing sugar
50 ml Aqua faba (chick pea water)
Juice of 1 lemon
Mix together on slow until powder disappears, then turn up speed. If you want it more runny add a little dash of more aquafaba until its good, likewise if you need it stiffer, add more icing sugar.
Keep covered so it doesn’t dry out, will keep in a food bag for up to a week. Can be frozen.
