In this video, I show you how to make full flaky Nigerian meat pie from scratch – from the dough to the filling and final baking. This recipe is perfect for home baking and for baking business.

✨ Ingredients
For the Dough
• 4 cups all-purpose flour
• 250g cold butter or margarine (cut into cubes)
• 1 tsp baking powder
• ½ tsp salt
• 1 tbsp sugar (optional, for flavor)
• 1 large egg
• ½–¾ cup cold water (add gradually)
For the Filling
• 300g minced meat (beef)
• 1 medium potato (diced small)
• 1 medium carrot (diced small)
• 1 small onion (chopped)
• 1 tbsp oil or butter
• 1 seasoning cube
• ½ tsp curry
• ½ tsp thyme
• Salt to taste
• ½ tsp black pepper
• 1 tbsp flour (to thicken)
• ¼ cup water
Egg Wash
• 1 egg
• 1 tbsp milk (optional)

✨ Directions
1. Make the Filling
1. Heat oil in a pan, add onions and sauté until fragrant.
2. Add minced meat and cook until brown.
3. Add seasoning cube, curry, thyme, salt, and pepper.
4. Pour in the diced potatoes and carrots.
5. Add a little water and cook until soft.
6. Sprinkle in 1 tbsp flour to thicken the sauce.
7. Stir well and allow to cool completely before using.

2. Make the Flaky Dough
1. In a bowl, mix flour, salt, baking powder, and sugar.
2. Add cold butter and rub lightly with fingertips until you get a coarse, crumb-like texture.
3. Add egg and mix.
4. Add cold water gradually until the dough comes together.
5. Do NOT knead! Just gather and form a smooth dough.
6. Wrap and let it rest for 10–15 minutes.

3. Assemble
1. Roll out the dough and cut into circles or rectangles.
2. Add a spoonful of filling.
3. Fold and seal the edges with a fork or by crimping.
4. Brush the top with egg wash.

4. Bake
• Preheat oven to 180°C
• Bake for 25–35 minutes or until golden and flaky.
