Speaking of comfort food, chili is one that our family enjoys very much. Super easy to make. I just take time. Best for winter when you serve it with hot basmati rice, tortilla chips (our favourite is the one with a hint of lime) and top it with mexican four cheese.
Here’s the ingredients:
Beef, minced, 1lb
Onion, 1 large or 2 small, chopped
Garlic, 1 clove, minced
Diced Tomatoes, 1 can, 28 oz
Small Red Beans, 1 can, 15 oz
Jalapeno Peppers, 2, diced (if you’re not into spicy food, you may skip it)
Bell Pepper, 1, green preferred but can do with other colors
Ground Cumin, ½ teaspoon
Chili Powder, 1-2 teaspoon, depend on how spicy you like
Salt, ½ tsp
Black Pepper, ⅛ tsp
4 Simple Steps:
1. Stir fry the chopped onion and peppers in an oiled heavy pan on medium high heat until veggie
2. Add garlic, minced beef, stir fry til well mixed and beef is no long pink in color
3. Add cumin, chili powder, salt and pepper, mix well before adding diced tomatoes and small red beans and the liquid from the cans.
4. Mix well, bring the mixture to boil, cover the lid, turn the heat back down to low and let it simmer for 2-3 hours. Stir every 30 minutes.
5. 3 hours later, uncover, turn the heat up to medium, let it simmer. Stir every 5 minutes. When the mixture becomes thick, it’s done.
